Sometimes called oil-fish, the butterfish is a creamy fish and melts in your mouth. The meat is oil-rich and flavor-intensive. Butterfish, also named as Escolar, has a dark brown to almost black colour and can be found in tropical and temperate waters. The oily flesh of the butterfish/escolar has a white colour.
