Duck breast fillet with orange marmalade

  1. Preheat oven to 160 degrees. Grease a glass dish with a lid.
  2. Pour approximately 1 / 4 cup marmalade in the bottom of the dish. Place the duck breasts in the dish on the jam. Prick holes in the duck breasts with a fork, and spread a layer of jam (about 1 tablespoon) over the duck breasts. Sprinkle the garlic over the top of the duck. Divide the onion and orange slices around the duck breasts in the dish.
  3. Cover the dish, and bake in the preheated oven until the duck breasts 38 degrees, measured with a meat thermometer, about 15 minutes. Remove the lid, even distribution over 1 tablespoon marmalade over each breast and put back in the oven, uncovered. Bake until the meat is medium rare is, 63 degrees core temperature.
